I don’t always have time to prepare lunch. Somehow, the day flies by between school drop off and pick up. Today, I volunteered to walk a friend’s two adorable dogs during lunch time so I made a simple and healthy meal that took exactly five minutes.
I threw this into the microwave and topped with a dollop of coconut oil. The combination of quinoa and grains and veggies provides a lot of nutrition –high in vitamins A & C and packed with protein! I added the coconut oil for extra calories–the meal came in a bit low at 460 for the entire bag. Coconut oil is also a great source of MCT’s or Medium Chain Triglycerides which have numerous health benefits to the body–including increased metabolic rate, satiety, and great skin!
The flavor combo reminded me of Indian cuisine…a hint of cumin and slightly sweet from winter squash and raisins.
I try to keep a few items in the freezer for days like these. I can’t wait to try their other flavors!
