We are home from the shore.
The week after is always a bit lazy for us. It is also time to eat well after so many donuts and slices of pizza and deli sandwiches…
and cocktails…but that is another story. Vacation is what it is and I enjoy every minute.
I no longer jump out of bed at dawn to run–my forty something year old knees don’t appreciate the damage that I did in earlier decades. Still, I come home from the trip craving simple whole foods.
This morning, I tried something new. I had bought this fabulous lavender infused honey for my tea at one of my favorite local shops. I enjoy it in all different types of tea–it makes light summer iced teas fresh and herbal and it makes a fantastic London fog tea latte.
I decided to try it in oatmeal. It was a delicious experience!
Lavender Walnut Oats
- 1/2 cup whole oats
- 1 cup unsweetened vanilla almond milk
- 1 tbs chia seeds
- 2 tbs walnuts
- 1/2 – 1tbs lavender infused honey
Cook oats with almond milk and chia seeds according to regular directions for oats. Top with walnuts and drizzle with infused honey.
