We have the best olive oil shop downtown! I have an addiction to their infused olive oils. We had fresh corn on the cob last week and I decided to try a spin on Mexican street corn.
Persian Lime Corn
- 5 ears of fresh corn, cut from the cob
- 1 tbs Saratoga Olive Oil Persian Lime
- 1 tbs grass fed butter
- sea salt to taste
- 2 tbs chopped cilantro
Over medium high heat, melt butter and olive oil. Add corn kernels and saute until lightly caramelized. (Unfortunately, my daughter will not eat anything truly brown…so I have to stop before I would like.) Add sea salt to taste and garnish with chopped cilantro. The Persian Lime oil is not as intense as fresh lime juice–but the flavor is incredible. It really does taste like summer!
