Today for brunch, I made this delicious Arugula and Sweet Potato hash with poached eggs. I’m still plugging along with the goal of getting 8-10 servings of fruits and veggies per day. It takes some planning! However, I have found some simple tricks to make it a bit easier on myself.

First–I have discovered frozen sweet potato chunks. The prep work is DONE. All one needs to do is warm them up.

Second–Grab a big bag of leafy greens and keep it on hand. If you are trying to up your veggie intake you can shake pre-washed greens into omelets, stir fries, salads, soups, and smoothies.

Third–Chopping extra veggies also helps. We had tacos the other night and I had a bunch of leftover diced onions.

This easy dish is full of key nutrients: Vitamins A, C, D, E and minerals like magnesium and zinc. Great for the immune system and glowing skin!
