I’ve been following a “mostly vegan” diet for 5 weeks now… I had blood work done last week and I am thrilled to report that my total cholesterol has dropped 45 points! This is very motivating for me. I hate the way that statins make me feel.
Eating meatless feels more natural each day. The only time that I stray is while eating out. If I can’t put together a satisfying meal–I simply make the best choice that I can…usually vegetarian dishes or seafood.
I’ve asked my doctor to reevaluate my risk in hopes of avoiding medication. Fingers crossed.
